- 1 cup almond milk (unsweetened, or sweetened to your preference)
- 1 cup almond flour
- 1/2 cup oats (rolled or quick oats)
- 2 tablespoons honey or maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- to taste chopped nuts or chocolate chips (Optional for stuffing and topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the almond flour, oats, baking powder, and salt. Stir well.
- In a separate bowl, whisk together the almond milk, honey or maple syrup, and vanilla extract.
- Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
- Scoop a tablespoon of the mixture and form it into balls. Place on a greased or parchment-lined baking tray.
- Bake for about 20 minutes, or until golden brown and firm to the touch.
- Let them cool for 5 minutes before transferring to a wire rack.
- Enjoy warm or at room temperature.
Notes
- Ensure the almond milk is at room temperature for better blending.
- Use honey for a non-vegan option; maple syrup is a great vegan alternative.
