A delicious and easy slow cooker recipe featuring tender chicken thighs in a sweet and savory pineapple sauce.

- 2 lbs boneless skinless chicken thighs
- 1 cup pineapple juice
- ½ cup brown sugar
- ½ cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- ¼ cup chopped green onions (for garnish)
Instructions
- Trim excess fat from the chicken thighs and pat them dry.
- In a bowl, whisk together pineapple juice, brown sugar, soy sauce, and minced garlic.
- Place chicken thighs in the crockpot and pour the sauce over them. Coat evenly.
- Cover and cook on LOW for 5–6 hours or on HIGH for 3–4 hours.
- Once cooked, remove chicken and set aside.
- In a small bowl, mix cornstarch with cold water to create a slurry.
- Stir the slurry into the crockpot sauce. Cook on HIGH for 10–15 minutes until thickened.
- Return chicken to the sauce or spoon the sauce over chicken before serving.
- Garnish with chopped green onions and serve hot.
Notes
- This recipe can also be served over rice or noodles for a complete meal.
- Adjust sugar levels to taste if you prefer a less sweet sauce.
