Description

A delicious and easy slow cooker recipe featuring tender chicken thighs in a sweet and savory pineapple sauce.


Ingredients

Scale
  • 2 lbs boneless skinless chicken thighs
  • 1 cup pineapple juice
  • ½ cup brown sugar
  • ½ cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • ¼ cup chopped green onions (for garnish)

Instructions

  1. Trim excess fat from the chicken thighs and pat them dry.
  2. In a bowl, whisk together pineapple juice, brown sugar, soy sauce, and minced garlic.
  3. Place chicken thighs in the crockpot and pour the sauce over them. Coat evenly.
  4. Cover and cook on LOW for 5–6 hours or on HIGH for 3–4 hours.
  5. Once cooked, remove chicken and set aside.
  6. In a small bowl, mix cornstarch with cold water to create a slurry.
  7. Stir the slurry into the crockpot sauce. Cook on HIGH for 10–15 minutes until thickened.
  8. Return chicken to the sauce or spoon the sauce over chicken before serving.
  9. Garnish with chopped green onions and serve hot.

Notes

  • This recipe can also be served over rice or noodles for a complete meal.
  • Adjust sugar levels to taste if you prefer a less sweet sauce.
