- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup finely chopped apples (Honeycrisp or Gala recommended)
- 1/2 cup caramel sauce (for drizzling)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- Gently fold in the chopped apples with a spatula.
- Scoop cookie dough onto prepared baking sheets, spacing 2 inches apart.
- Press a few extra apple pieces on top of each dough ball if desired.
- Bake for 10–12 minutes, until the edges are golden brown.
- Let cookies cool on the pan for 5 minutes before transferring to a wire rack.
- Drizzle warm caramel sauce over cooled cookies before serving.
