A delicious and quick chicken lo mein recipe made with fresh vegetables and savory sauce.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 8 oz lo mein noodles
- 2 cups mixed vegetables (bell peppers, carrots, broccoli)
- 3 cloves fresh garlic, minced
- ¼ cup low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tsp cornstarch
- Salt and pepper to taste
Instructions
- Chop chicken into bite-sized pieces and mince garlic.
- Cook lo mein noodles according to package instructions until al dente; drain and reserve ½ cup of pasta water.
- In a large skillet over medium-high heat, add oil and sauté chicken until golden brown (5-7 minutes). Remove from the pan.
- In the same skillet, add garlic and mixed vegetables; stir-fry for about 3 minutes until vibrant but still crunchy.
- Whisk together soy sauce, sesame oil, cornstarch, and reserved pasta water; pour over the vegetables.
- Add cooked chicken and drained noodles to the skillet; toss everything together until well coated.
Notes
- This dish can be customized with any vegetables you have on hand.
- For a spicy kick, add some chili sauce or flakes.
