Description

Delicate and sweet meringue cookies made with egg whites and almond flour.


Ingredients

  • 110g egg whites (about 3 large eggs, room temperature)
  • 150g granulated sugar
  • 100g powdered sugar
  • 120g almond flour
  • Gel food coloring (optional)
  • 75g butter or cream cheese (for filling)

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a clean bowl, whip egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
  3. In another bowl, sift together almond flour and powdered sugar.
  4. Gently fold the dry mixture into the meringue until fully combined.
  5. Transfer batter to a piping bag and pipe small circles on prepared sheets, leaving space between each.
  6. Let rest for 30 minutes until a skin forms, then bake for 15–20 minutes or until they lift easily from parchment.

Notes

  • For best results, ensure that the bowl and whisk used for the egg whites are completely clean and free of any fat.
  • These meringue cookies can be filled with buttercream or enjoyed plain.
