Delicate and sweet meringue cookies made with egg whites and almond flour.
Ingredients

- 110g egg whites (about 3 large eggs, room temperature)
- 150g granulated sugar
- 100g powdered sugar
- 120g almond flour
- Gel food coloring (optional)
- 75g butter or cream cheese (for filling)
Instructions
- Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
- In a clean bowl, whip egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
- In another bowl, sift together almond flour and powdered sugar.
- Gently fold the dry mixture into the meringue until fully combined.
- Transfer batter to a piping bag and pipe small circles on prepared sheets, leaving space between each.
- Let rest for 30 minutes until a skin forms, then bake for 15–20 minutes or until they lift easily from parchment.
Notes
- For best results, ensure that the bowl and whisk used for the egg whites are completely clean and free of any fat.
- These meringue cookies can be filled with buttercream or enjoyed plain.
