Description

Delicious and easy campfire packets with smoked chicken sausage, baby potatoes, and fresh vegetables.


Ingredients

Scale
  • 1 1/2 pounds baby potatoes (halved)
  • 14 ounces smoked chicken sausage (sliced)
  • 2 ears corn (cut into rounds)
  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 1 medium red onion (sliced)
  • 3 tablespoons olive oil
  • 4 tablespoons butter
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Parboil the potatoes for 6 minutes at home.
  2. Cool the potatoes.
  3. Toss the potatoes, sausage, corn, bell peppers, onion, olive oil, garlic powder, smoked paprika, salt, and black pepper together.
  4. Divide the mixture onto heavy-duty foil sheets at camp.
  5. Top each portion with butter.
  6. Seal the foil tightly.
  7. Cook the packets over medium heat for 18 to 22 minutes.
  8. Flip the packets once halfway through cooking.
  9. Check that the potatoes pierce easily with a fork before serving.
