A deliciously seasoned roasted whole chicken that is juicy and flavorful.
Ingredients

- 1 whole chicken (4–5 lbs)
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 4 garlic cloves, minced
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry with paper towels.
- In a bowl, mix olive oil, rosemary, thyme, parsley, garlic, salt, and pepper.
- Rub the herb mixture generously over the chicken, including under the skin.
- Squeeze lemon juice over the top.
- Place the chicken breast side up in a roasting pan and roast for about 1 hour and 15 minutes or until juices run clear from the thigh.
- Let the chicken rest for 10-15 minutes before carving.

- For extra flavor, consider marinating the chicken overnight.
