Description

A deliciously seasoned roasted whole chicken that is juicy and flavorful.


Ingredients

  • 1 whole chicken (45 lbs)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 4 garlic cloves, minced
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a bowl, mix olive oil, rosemary, thyme, parsley, garlic, salt, and pepper.
  4. Rub the herb mixture generously over the chicken, including under the skin.
  5. Squeeze lemon juice over the top.
  6. Place the chicken breast side up in a roasting pan and roast for about 1 hour and 15 minutes or until juices run clear from the thigh.
  7. Let the chicken rest for 10-15 minutes before carving.
