These glazed baby carrots with miso and sesame are a deliciously simple side dish that adds vibrant flavor to any meal.


Ingredients

  • 1 lb fresh baby carrots
  • 3 tbsp white or yellow miso paste
  • 2 tbsp toasted sesame oil
  • 1 tbsp honey or maple syrup
  • 2 tbsp toasted sesame seeds

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and peel larger carrots; if using baby carrots, simply rinse them. Cut larger carrots into uniform sticks.
  3. In a bowl, whisk together the miso paste, sesame oil, honey (or maple syrup), and a splash of water until smooth.
  4. Toss the prepared carrots in the glaze ensuring they are evenly coated.
  5. Spread the glazed carrots on the baking sheet in a single layer. Roast for 20-25 minutes, flipping halfway through for even caramelization.
  6. Remove from the oven and sprinkle with toasted sesame seeds before serving.
