Description
A refreshing salad that combines the sweetness of peaches with the creaminess of burrata and the crunch of toasted nuts.
Ingredients

- 2 ripe peaches
- 1 cup cherry tomatoes
- 4 cups arugula or mixed greens
- 1 ball fresh burrata cheese
- ¼ cup toasted almonds or walnuts
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze
- 1 teaspoon honey
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
Instructions
- In a dry skillet over medium heat, add the almonds or walnuts. Stir frequently for 3–5 minutes until they turn golden brown and fragrant. Remove from heat and let them cool.
- Rinse the peaches and pat them dry. Slice them into thin wedges, removing the pit. Cut the cherry tomatoes in half for easy eating and even distribution of flavors.
- In a large serving bowl or platter, spread the arugula or mixed greens evenly.
- Arrange the peach slices and halved cherry tomatoes on top of the greens.
- Gently place the ball of burrata in the center of the salad and tear it into smaller pieces for easy serving.
- Drizzle extra virgin olive oil over the salad and add honey.
- Finish with a swirl of balsamic glaze, sea salt, and black pepper.
- Scatter the toasted nuts over the top and garnish with torn fresh basil leaves.
