Description

A refreshing and nutritious quinoa black bean salad perfect for any occasion.


Ingredients

  • 1 cup Quinoa (cooked)
  • 1 can Black beans (drained and rinsed)
  • 1 cup Corn (fresh or frozen)
  • 1 cup Pineapple (diced)
  • 1 cup Cherry tomatoes (halved)
  • 1 small Red onion (diced)
  • 1 small Bell pepper (diced)
  • 1 cup Cilantro (chopped)
  • 3 tablespoons Olive oil
  • 2 tablespoons Lime juice (freshly squeezed)
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt (to taste)
  • 1/2 teaspoon Black pepper (to taste)

Instructions

  1. In a large mixing bowl, combine the cooked quinoa, black beans, corn, pineapple, cherry tomatoes, red onion, bell pepper, and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and black pepper.
  3. Pour the dressing over the quinoa mixture and toss until well combined. Serve immediately or chill in the refrigerator for 30 minutes for enhanced flavors.
