- 1 cup Quinoa (cooked)
- 1 can Black beans (drained and rinsed)
- 1 cup Corn (fresh or frozen)
- 1 cup Pineapple (diced)
- 1 cup Cherry tomatoes (halved)
- 1 small Red onion (diced)
- 1 small Bell pepper (diced)
- 1 cup Cilantro (chopped)
- 3 tablespoons Olive oil
- 2 tablespoons Lime juice (freshly squeezed)
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- 1 teaspoon Salt (to taste)
- 1/2 teaspoon Black pepper (to taste)
Instructions
- In a large mixing bowl, combine the cooked quinoa, black beans, corn, pineapple, cherry tomatoes, red onion, bell pepper, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and black pepper.
- Pour the dressing over the quinoa mixture and toss until well combined. Serve immediately or chill in the refrigerator for 30 minutes for enhanced flavors.
