Description

This creamy salmon orzo is a delicious and hearty dish packed with flavor and nutrition.


Ingredients

Scale
  • 4 skinless salmon fillets
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • Juice from ½ lemon
  • ½ cup grated Parmesan
  • Freshly ground black pepper (for serving)
  • Chili flakes (for serving)

Instructions

  1. Grate the Parmesan cheese, finely chop the onion, and mince the garlic cloves.
  2. Season the salmon fillets with garlic powder, sweet paprika, and ½ tsp each of salt and pepper.
  3. Heat olive oil and butter over medium-high in a large nonstick skillet.
  4. Add the seasoned salmon fillets and sear for 3-4 minutes per side until golden brown.
  5. Remove the salmon from the skillet and set aside.
  6. Reduce the heat to medium, then add the garlic and onion to the skillet, cooking until soft, about 2 minutes.
  7. Stir in the thyme and remaining salt and pepper.
  8. Add the orzo and toast for about 1 minute, stirring continuously.
  9. Pour in the chicken broth and bring to a boil.
  10. Reduce heat to medium-low and simmer until orzo is almost al dente and most of the liquid is absorbed, about 8 minutes.
  11. Add the baby spinach and let it simmer until wilted, about 2 minutes.
  12. Stir in the lemon juice and Parmesan cheese, adjusting thickness with broth as needed.
  13. Add the seared salmon to the skillet and simmer for an additional 2-3 minutes.
  14. Serve topped with freshly ground black pepper and chili flakes.

  • This dish pairs well with a side salad or steamed vegetables.
