Description
Delicious and nutritious loaded sweet potato bowls topped with ground beef, avocado, and cottage cheese.
Ingredients
- 2 large sweet potatoes, diced
- Avocado oil spray
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 pound ground beef (grass-fed if desired)
- 3/4 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 large avocado
- 16 ounces cottage cheese or Greek yogurt
- Crushed red pepper, to taste
- Hot honey, for drizzling
Instructions

Preheat the oven or air fryer to 400°F.

Dice the sweet potatoes into cubes.

Place the sweet potatoes in the air fryer basket or lined baking sheet, spray lightly with oil, and sprinkle with seasonings. Toss to coat evenly, then air fry or bake for about 18 minutes, shaking the basket halfway through, until tender and lightly crispy.

While the sweet potatoes cook, heat a skillet over medium heat and sauté the ground beef with the seasonings for 5–7 minutes, or until fully cooked.

To assemble the bowl, add the cooked sweet potatoes, ground beef, sliced or diced avocado, and cottage cheese.

Finish with a sprinkle of crushed red pepper and a drizzle of hot honey. Serve and enjoy.
Notes
- For a spicier kick, add more crushed red pepper.
- This recipe can be made with either cottage cheese or Greek yogurt based on preference.
