Description
A refreshing pasta salad made with cherry tomatoes, avocado, and a tangy lime dressing.
Ingredients

- 8 oz short pasta (like rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup olive oil
- Juice of 2 limes (about 1/4 cup)
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions in salted water until al dente. Drain and rinse under cold water.
- In a bowl, whisk together olive oil, lime juice, salt, and pepper.
- Chop the tomatoes, avocado, cilantro, and red onion into bite-sized pieces.
- In a large bowl, combine cooled pasta with chopped veggies. Pour the dressing over the salad and gently toss to combine.
- Chill in the fridge for at least 30 minutes before serving.
Notes
- For added flavor, consider tossing in some feta cheese or grilled chicken.
- Can be made a day in advance for easier meal prep.
