Description

A refreshing pasta salad made with cherry tomatoes, avocado, and a tangy lime dressing.


Ingredients

  • 8 oz short pasta (like rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • Juice of 2 limes (about 1/4 cup)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted water until al dente. Drain and rinse under cold water.
  2. In a bowl, whisk together olive oil, lime juice, salt, and pepper.
  3. Chop the tomatoes, avocado, cilantro, and red onion into bite-sized pieces.
  4. In a large bowl, combine cooled pasta with chopped veggies. Pour the dressing over the salad and gently toss to combine.
  5. Chill in the fridge for at least 30 minutes before serving.
